Lemon Garlic Rosemary Roasted Chicken

Hey y’all! I’m so happy to bring you all this delicious recipe for Lemon Garlic Rosemary Chicken. This tasty bird was an absolute hit on the Instagram page so naturally it has to make it’s debut here on the blog. I can’t wait for you to make this easy 8 ingredient savory recipe. Let’s get started.

Here’s what you’ll need:

(1) 3 lb whole chicken

3 tsp lemon rosemary salt

2 tbs paprika

1 tbs black pepper

1/2 lemon

1/2 garlic bulb

2 sprigs of rosemary

3 tbs olive oil

400°F preheated oven

I started out with a chicken that I’d salted the night before with the 2 tsp of lemon rosemary salt. After pulling the bird out of the fridge I blotted the chicken dry from any moisture. This is to make sure we have a bird with crispy skin.

Facetune_29-03-2020-09-15-03After we blot the chicken, let’s go ahead and add our oil, seasonings, and the remaining 1 tsp of salt on both sides of the chicken and rub them in evenly. It should look at little something like the picture above. I placed my chicken on top of my rosemary sprigs which I’ve placed into a cast iron skillet. It wouldn’t be a RoxysGotMoxy food post if a cast iron skillet wasn’t involved.

I nestled the garlic bulb and lemon face down into the pan…I know it’s face up in the picture, that’s so you guys can see the cross section. Placing them face down allows all  the flavor to seep into the drippings from the chicken.

Let’s get our chicken into the oven that we’ve preheated at 400° F for 1h 15m. At 1h 10m into the cooking I basted the bird with the lemony garlicky pan drippings so that the skin could get one last chance to take on some beautiful color. Once your timer is up it’s time to eat!
